Bill's Train Shop has laser-cut wood kits for Civil War and 1870-era cars, a few of which survived into the 1890s.
Alkem Scale Models has laser-cut wood kits for Civil War-era rolling stock which survived into the 1890s in some cases.
Rio Grande Models has a nice wooden kit of a Central Pacific (also V&T) 28' ventilated boxcar with classic CP trucks.
